Eldritch Blast had disappeared from my hotbar and also my spellbook but it was there if I went into the Cantrips section of the hotbar. I found it in the spellbook by using the Search tool within the spellbook and was then able to drag it back onto the hotbar where it belonged.

You have to drag a move everything in the order you want. However, you can go the the Interface tab in the settings and select what gets or don't get added to the hotbar.
